I know I’m not the only parent whose kids get crazy excited whenever fruit snacks or roll ups are brought home from the store and saved for their lunch boxes. The only time I get more love and attention from them is if I am making breakfast for dinner, because apparently pancakes and bacon trump any other food combination known to man. However, I HATE them eating so much sugar and corn syrup, and am harbored with guilt despite their smiling faces. So when I discovered how EASY it was to make fruit roll ups at home, I was ecstatic. After all, it only requires some ripe fruit and a lemon.
This is a great way to use up the quickly ripening fruit from your trees, or the berries, peaches, plums, apricots, etc… that are on sale at the grocery store. Pick any combination that sounds good to you, and throw them in a blender or food processor. 4 cups of fruit yields two standard baking sheets worth of roll ups (8 rolls per sheet). I like to make as much as possible at once, because they go fast in my house.
I add pitted dates as a natural sweetener if the fruit isn’t sweet enough (downside of the grocery store variety) and lemon juice to preserve color and add another flavor dimension, but you can add sugar, honey, agave, or spices if you want. Blend until smooth and poor onto a rimmed baking sheet lined with high quality plastic wrap or parchment paper.
Thinly spread the blended fruit on the baking sheets and pop them in an oven set to 170°F for 4 hours, or until set in the middle. I have been putting them in the oven mid-morning and taking them out before making dinner and this method has worked really well. As a bonus, it makes the house smell nice.
Once they’re done, peel the sheet of dried fruit off the plastic and place on cutting board to slice with a pizza cutter. The edges will be crisp, so square off the sheet and feed the crunchy (but yummy) edges to the hovering children (and husband) standing around waiting for you to give them some. Then slice the sheet longwise in one inch thick strips.
Next cut a piece of parchment paper into one inch thick strips with kitchen sheers. Place the strips of dried fruit sticky side down onto the strips of parchment and roll. You can use stickers or string to keep them rolled up if they come unrolled. Store in an airtight container and they’re ready to toss into a lunch pail or purse.
